15-minute healthy breakfast recipes from 'Good News'

Mornings are always stressful. Everyone is in a hurry to leave for work and school.  Between the traffic, the long hours, and the stress of all the work piling up, lunch break seems so far away.  We need to arm ourselves with the best possible defense from morning stress and lack of energy – breakfast!

Breakfast has been called the most important meal of the day, and with good reason.  Studies from the American Dietetic Association say that children who have breakfast regularly generally do better in class. For the adults, having breakfast gives you better concentration at work and prepares you for any sort of strenuous physical activities.

“Good News,” a feel-good magazine program hosted by Vicky Morales that airs Sunday nights on GMA News TV, regularly features tasty recipes for busy moms.  Here are some breakfast recipes that you can prepare within 15 minutes--perfect for those on the go!



Egg and Avocado Burrito

Ingredients
2 ripe avocados, mashed
2 eggs (beaten)    
2 tbsp milk
salt and pepper
¼ cup cheese (grated)
tortillas

Directions
Mash the avocados, season with salt. Make an omelet. Add the cheese, milk, salt and pepper to the beaten eggs and mix. Cook for about three minutes or until the eggs are set.
Heat the tortillas. To assemble, slice the omelet into thin strips. Place inside a tortilla along with one to two tablespoons of the avocado mash, then roll into a burrito.




German Potato Pancakes

Ingredients
6 Potatoes (peeled and shredded)
½ cup Onion (chopped)
2 tbsp all purpose Flour
2 Eggs (beaten)
½ tsp salt
¼ cup vegetable oil

Directions
Peel and shred the potatoes. In a large bowl, add shredded potatoes, beaten eggs, chopped onions, flour, and salt. Form into pancakes and fry each side for three to five minutes or until golden brown.




Carrot French Toast

Ingredients
½ cup shredded carrots (about 2 carrots)
5 slices wheat bread
2 eggs
1 tbsp milk
vanilla syrup
cinnamon powder

Directions:
Peel and shred the carrots. Add the milk, eggs, cinnamon powder and a drop of vanilla to the shredded carrots. Mix well. Dip the wheat bread slices into the mixture and fry each side until golden brown. -AA/PF, GMA News
