
A burger can be considered a heavy meal as one can get up to 300 calories from it, depending on the ingredients.
This is why more people are opting for vegan burger options which use no meat or dairy products.
Chef Kevin Martires created a Mexican-inspired vegan burger which uses black beans, brown rice and beetroot.
Here's his recipe for the El Chimichurri Vegan Burger.
Ingredients
cooked brown rice
diced beetroot
boiled black beans
diced onions
chopped wansoy
chopped parsley
cumin
flaxseed meal
gluten-free flour
vinegar
salt
pepper
How to prepare
1. Mix brown rice, beetroot, black beans, onions, wansoy, parsley, cumin, flaxseed meal, gluten-free flour, vinegar, salt and pepper in a bowl
2. Form into patties
3. Place in the oven for 20 minutes
4. Pan fry before serving
5. Assemble in a vegan burger bun with vegan garlic mayo, iceberg lettuce, chimichurri sauce and tomato salsa
