Pinas Sarap recently discovered a one of a kind seafood pasta in their Caviteño food and history tour. Caviteños have this unique version of the Pinoy favorite, pancit, and ithe noodles are colored black - they call it Pancit Estacion Negra. It's quite an appropriate name since the word negra in Spanish means black.

So what ingredient gives Pancit Estacion Negra's noodles its black color? One might assume it is pork blood, since that's what makes Dinuguan black. But that's not the case here. The black color of Pancit Estacion Negra's noodles comes from squid ink!
