
When talking about American food, chicken wings or buffalo wings come to mind first most of the time.
The said dish that originated in the United States around the 1960s has grown so popular over the decades that several chicken wings joints have popped up all over the world, including in the Philippines.
And if you're addicted to chicken wings, then you've probably tried different flavors of it such as cheese, barbecue, sour cream, hot and spicy, garlic parmesan, and many others.
In a recent Pinas Sarap episode, the funny, naughty, and adorable chef and online content creator, Ninong Ry, gave his Filipino spin to the well-loved chicken wings using salted eggs or itlog na pula and chicken thighs.

If you want to try it at home, below is the recipe for Ninong Ry's Salted Egg Chicken Thighs.
Ingredients:
chicken thighs
salted eggs (itlog na pula/itlog na maalat)
ground pepper
fish sauce (patis)
vinegar
red chili peppers
butter
garlic
water
all-purpose flour
cornstarch
salt
sugar

Procedure:
1. Sprinkle pepper over chicken thighs.
2. Add fish sauce, and if you want, you can add salt, too.
3. Add vinegar to help tenderize the chicken.
4. For the sauce, get all the yolk from the salted eggs.
5. Chop the red chili peppers.
6. Melt the butter in a frying pan on medium heat.
7. Add the garlic.
8. Add chopped red chili peppers.
9. Add salted eggs.
10. Mash the salted eggs.
11. Add water.
12. Add sugar once the sauce becomes creamy in consistency.
13. Sprinkle freshly ground pepper.
14. Add fish sauce.
15. Once cooked, set aside the sauce.
16. For the chicken breading, mix together the all-purpose flour, cornstarch, ground pepper and salt.
17. Dip the chicken in the breading before frying.
18. Once done frying, add the sauce and toss the chicken thighs in the frying pan.
As an extra tip to avoid food waste, Ninong Ry suggested that you use the egg whites from the salted eggs to make ensalada.
