In Pop Talk, Chef Gelo Guison got to try some of their most popular dishes, which includes their ultra famous Callos ala Madrileña, Beef Estofado, and Paella Cochinillo con Trufa.

Here's what he had to say about the dishes:

1. Callos a la Madrilena - ★★★★★

Price: PhP420

What is it: A slowly braised ox tripe, pork knuckle, and ox feet dish popularly served in Madrid, Spain

Chef Gelo says, “My god! It's so gelatinous, it's so sticky, and it's so good! And that very distinct Spanish taste of paprika which gives an earthy taste.

"I don't if it's only me, but there's a delayed spicy, tingly sensation in the callos.”

2. Estofado de Res - ★★★★★

Price: PhP620

What is it: A Spanish braised beef that has been slow-cooked for 8-hours.

Chef Gelo says, “I don't get intimidated when it comes to dishes, pero I think I have to ask the owners or the chef how they do it because this is really good.

"I don't know if you'd agree with me, but there's no distinct flavor? I mean, walang nagsa-stand out because everything just was perfectly homogenous and combined.”
