In Fil-Am Chef Alvin CAilan's newly-released cookbook titled 'Amboy,' the renowned chef shared his own recipe for making champorado which he loves to pair with cool ranch-flavored Doritos.

For Filipinos, there's nothing more comforting than savoring a warm bowl of champorado during our colder, rainy months. It's even better with salty tuyo or dilis on top since its sweet, rich, and creamy flavor contrasts well with the umami of the dried fish.

However, for renowned Fil-Am Chef Alvin Cailan, nothing beats his favorite combination of champorado and... Doritos?

As detailed in his cookbook titled 'Amboy: Recipes from the Filipino-American Dream,' Chef Alvin shared that he loves pairing the classic Pinoy comfort food with Cool Ranch Doritos.

Although we haven't tried his champorado-Doritos combo for ourselves, American food vlogger Emmy Cho of emmymadeinjapan has.

In her latest YouTube video, Emmy cooked and did a taste test of champorado following Chef Alvin's recipe.

Once she finished preparing everything, Emmy first tried the champorado with just dried fish on top.

"It's like a warm, nurturing version of Cocoa Krispies. It's soft, the texture is really lovely, like the bite of the rice, and it's thickened, kinda similar to oatmeal but it doesn't have that oaty flavor.

"The chocolate flavor is lovely, the level of sweetness is lovely. It's not really sweet at all. It's just nice and chocolate-y.

"And the addition of the fish in there is lovely, I love it. It's a nice salty, funky contrast to the cocoa, sweet, rich, dairy flavors that you've got in the champorado," said Emmy.

After tasting the champorado as is, she then tried it with Doritos as recommended by Chef Alvin.

"Genius! The salty, tangy, onion-y flavors of the Dorito chip goes so well with the rich, dairy, chocolate-y flavors of the champorado, it's insane. And then it's warm and then it's got this great, big crunch in the chip. So, so good," she described.

Emmy added that it's "terribly addictive" which can evidently be seen in her video when she just kept having one bite after the other.

Seeing her joyous reaction upon tasting this "ChampoRito" combo has definitely piqued our interest as well.

The next time we find ourselves eating a bowl of champorado, maybe we'd skip the fish and opt for Doritos instead.
