In an episode of Unang Hirit, Kapuso hottie Chef Jose Sarasola shared his unique pinakbet recipe, which has ube in it.
According to Chef Jose, ube is high in antioxidants and helps lower blood cholesterol level.
Plus, it adds more color to your pinakbet, making it even more Instagrammable.
To recreate this recipe, you'll need the following ingredients:
pork liempo
ube (purple yam)
pork cube
squash (kalabasa)
string beans (sitaw)
eggplant (talong)
bitter gourd (ampalaya)
tomatoes
garlic
onion
ginger
salt
pepper
bagoong alamang
cooking oil
And here are the 12 steps to cooking Chef Jose's healthy Fried Liempo Pinakbet with Ube:
1. Let the pork boil for 35 minutes. Once done, set aside the pork broth for later.
2. Once the pork has already cooled off, season it with salt and pepper.
3. Fry the pork until crispy.
4. Sauté the garlic, onion, ginger, and tomatoes.
5. Once the tomatoes have softened, add the squash and ube.
6. Add the pork broth.
7. Add a pork cube for more flavor.
8. Add the bagoong, talong, and ampalaya.
9. Add the string beans and okra.
10. Season with salt and pepper.
11. Mix well and cook until all the ingredients have softened.
12. Slice the fried pork and add to the rest of the ingredients of your pinakbet.
According to Chef Jose, aside from its health benefits, ube is perfect to pair with squash in a dish since they have the same texture.
