Learn how to make the popular Japanese dish, Katsudon.
Procedure:
1. Season pork with salt and black pepper. Gently pound pork pieces with the back of the knife. Repeat with the remaining pork.
2. In a bowl, whisk two eggs. Dredge pork pieces with flour, dip in egg, then breadcrumbs, press firmly to coat.
3. Heat oil in a deep-frying pan over medium-high heat. Cook pork in batches until golden brown. Drain and let it cool. Slice.
4. In a saucepan, sauté onion until soft. Combine stock, mirin, dashi, soy sauce and sugar in the pan. Simmer for a few minutes. Pour sauce in a bowl with rice and pork.
5. Slightly whisk three eggs. Drizzle over pork in each bowl.
6. Cover the bowl for two minutes and sprinkle with leeks on top.
