1. Mix pork, soy sauce, garlic, sesame oil, egg, and potato starch evenly then set aside.
2. Boil the broth then add the pork one by one.
3. Let it boil till pork cooks.
4. Mix potato starch and cold water.
5. When soup boils after pork is cooked, add potato starch and water mixture slowly and mix the stock vigorously. Let it boil until it becomes glossy and bubbles
6. Add the remaining beaten eggs and slowly pour the rest of the beaten egg while whisking the soup.
7. Add the mami noodles into a serving bowl and add the soup and pork.
8. Sprinkle with spring onions and serve with fried mantao.
