Go Mexican this week with Chef Boy's version of the classic corn on the cob and beef carnitas. 



Mexican Corn on the Cob
 
Procedure:
 
1. In a stock pot, boil water and add salt. Half cook the corn cobs. Drain.
 
2. Rub the corn with lime.

 
3. Spread butter on the corn.

 
4. Sprinkle cheese, cilantro, and season with cayenne pepper.

 
5. Grill corn cobs in a griller with the husk on.


6. Serve beside the beef carnitas.

 
Beef Carnitas
 
Procedure:
 
1. Mix together all spices in a small bowl. Rub the spices all over your flank steak. Place steak at the bottom of your stock pot.

 
2. Cover the steak with the chopped onions, bell peppers, and jalapeno pepper. Turn heat on low and cook until tender.

 
3. When the beef is tender, remove meat from pot and shred with a fork. 

 
4. Serve with lime on the side.
