Filipinos have a thing or two for street foods whether it may be fish balls, isaw, barbeque, etc. And one that's evidently loved by most is what they call the “adidas.” Adidas or grilled chicken feet is a Filipino staple street food that's named after the famous brand. It was named that way because the feet of the chicken reminded Filipinos of the three stripes on the logo of Adidas.
In the shoe capital of the Philippines, Marikina, a famous ihaw-ihaw restaurant is said to serve one of the most scrumptious adidas around the city. Established in 2009, Dimple's BBQ started out as a regular ihaw-ihaw on the street and later on developed into a restaurant since its patrons have been growing day by day. Dimple's BBQ sells its adidas for PhP18 per stick and is able to consume five kilos of chicken feet per day.
Pinas Sarap host Kara David visited Dimple's BBQ and met the owner, Dimple De Leon, who taught her their famous recipe.
Here's the recipe for Dimple's adidas below.
Ingredients: Chicken feet, soy sauce, lemon soda, pineapple juice, brown sugar, calamansi, salt, garlic, chili, pepper, and food coloring
Cleaning
Since chicken feet often come with smell, you have to properly clean them and here's how you do it.
1. In a bowl, add hot water and the chicken feet. Let the hot water peel off the skin on the chicken feet.
2. Once the skin peels off, cut the nails off using scissors or a knife.
Marinade
1. In a bowl, add the chicken feet, soy sauce, lemon soda, pineapple juice, brown sugar, calamansi, salt, garlic, chili, pepper, and food coloring.
2. Mix all ingredients and let its flavor sink into the chicken for at least 15 to 20 minutes.
Cooking
1. In a pan, cook the adidas along with the marinade.
2. Let it boil for 20 to 30 minutes.
3. Once the chicken feet become softer, put a stick through it and grill it for at least 5 minutes.
Upon tasting Dimple's chicken feet, host Kara david shared, ““Masarap sya kasi masarap yung timpla tapos at the same time talagang naluto ng husto, napalambot talaga. So nanuot na yung flavor mismo dun sa chicken feet.”
