These words perfectly describe Santiago Filipino Restaurant, which caters to the culture of Filipinos who love eating good food and sharing great memories at the dinner table.
The three Ks pertain to what they can offer every customer who enters their cozy, heirloom-style interiors -- great food, good coffee, and the perfect ambiance for families and friends to dine to their heart's content.
In an episode of Pop Talk, host Tonipet Gaba brings Chef Rolando Laudico for a proper lunch out in Santiago to get a taste of their best-selling Filipino dishes.
Here are some of the things they tried and what the renowned chef thinks of their cuisine.
Gambas with mushroom is a popular shrimp dish that can both be an appetizer and a main course meal. Thanks to its medium to large-sized shrimps, appetizing sauce, and mushroom toppings, this dish is definitely something you shouldn't miss.
According to Chef Laudico, “For me, it's not gonna be gambas if wala 'yung garlic flavor and this has that.
"I like the fact that they serve it with bread too kasi the sauce… ang dami kaya it's nice to soak the bread there.”
Santiago boasts itself for being the home of the best dinuguan in the market. Their signature Santiago dinuguan is made of pork liempo and liver covered in thick pork blood stew -- a must-order for every dine-in customer.
“I like na mayroon silang green sili na kasama dito sa dinuguan because I like my dinuguan spicy,” comments Chef Laudico.
“What makes a perfect dinuguan is 'yung freshness ng pork blood and the type of vinegar that you use. You would know if a dinuguan is properly cooked if the sauce is hindi gaano ka-smooth and namumuo na. Ibig sabihin, that's not a good dinuguan.
"Here, maganda 'yung consistency ng sauce.”
Putting a twist to the popular indigenous Filipino dish, Santiago grills its vegetables before mixing them in their fish or shrimp sauce.
According to Chef Laudico, grilling greens rather than cooking them gives the dish a fresher flavor.
He says, “Excited ako dito kasi this is how I also do my pinakbet -- grilled. Ganito 'yung ginagawa ko, ginigrill ko 'yung vegetables and imbis na lulutuin ko pa siya, tino-toss ko 'yung bagoong para it's fresher to the palate."
