
Mangoes are usually associated with dessert, but with reports of its excess supply in the past months, Filipinos came up with ways to use the beloved fruit in savory dishes.
Chef Gilly Gomez of the Magsaysay Center of Hospitality and Culinary Arts shared three recipes in Good News that include ripe mangoes in the ingredients.

This dish costs P140 and serves 3 to 5 persons.
Ingredients:
Onion, thinly sliced
Garlic, chopped
Ginger, thinly sliced
Yellow bell pepper, diced
Boneless chicken breasts, sliced
Red curry paste
Ripe mango puree
Coconut milk
Bird's eye chili (optional)
Procedure:
Saute onion, garlic, and ginger
Add yellow bell pepper and boneless chicken breasts
Add red curry paste and stir in ripe mange puree
Pour coconut milk and mix everything in the pan
Simmer for a few minutes
Add bird's eye chili for extra spicy flavor
This dish costs P200 and serves 6 to 8 persons.
Ingredients:
Onion, thinly sliced
Garlic, chopped
Bagoong
Dried shrimp
Yellow and red bell pepper, diced
Chicken strips
Ground chicken liver
Water or chicken stock
Ripe mango puree
Oyster sauce
Soy sauce
Carrots, cut into strips
Young corn, cut into strips
Canton noodles
Procedure:
Saute onion and garlic
Add bagoong, dried shrimp, yellow and red bell pepper, chicken strips, and ground chicken liver
Add water or chicken stock, followed by ripe mango puree, oyster sauce, and soy sauce
Add carrots, young corn, and canton noodles
Mix together until the noodles are cooked and coated by the sauce
This dish costs P70 and serves 8 persons.
Ingredients:
Sugar
Hot water
Evaporated milk
Glutinous rice four
Sliced ripe mangoes
Desiccated coconut for coating
Procedure:
In a mixing bowl, melt sugar in hot water.
Pour in evaporated milk and glutinous rice flour
Mix until you get a clay-like consistency.
Steam the dough.
Get a piece of the dough and form it into a ball
Put a piece of ripe mango inside the ball
Roll the ball in a mixture of desiccated coconut and sugar
