Pinas Sarap


Check out how the Maranao tribe does their special chicken dish.

In a recently uploaded episode of Pinas Sarap, host and veteran journalist Kara David continues her adventure in Iligan City and did not miss the chance to meet the Maranao tribe. Iligan City is vibrant with numerous indigenous tribes.

Councilor Michelle Sweet of Iligan City shared, “We are very rich in culture. We have very different traditions and different cultures but we respect each other. Despite our differences, we live in a peaceful and harmonious city.”

Known for being the advocates of peace, the Maranao tribe welcomes their guests with open arms as they serve them with the highest hospitality called Pagana Maranao. It's a lavish feast that they offer to their guests.

One of the main attractions of the Pagana Maranao is their special Chicken Piaparan. This scrumptious golden dish is the centerpiece of every occasion. Kara met up with Bairona Disoma, a Maranao, to teach her how the dish is made.

If you're just as curious as Kara, here's the recipe below.

Chicken Piaparan

Ingredients:

Bell pepper, garlic, chili, turmeric powder, salt, onion leeks, palapa, gata, grated coconut, onions, halal na manok


Procedure:

1. In a bowl, marinate your halal na manok in turmeric powder and salt.

2. Add palapa or mixed ginger, native onions, and salt to the mixture as well as chili.

3. Set aside for the flavor to seep in.

4. In a bowl, add your grated coconut and mix it with turmeric powder.

5. Add palapa and ginger to the grated coconut mixture and then mix.

6. In a pan, sauté garlic and marinated chicken.

7. Add water and let it boil until the chicken softens.

8. After 10 minutes, add gata to the mixture.

9. Let it boil for 5 to 10 minutes.

10. Once cooked, separate the gata from the chicken.

11. In a pan, sauté garlic and add your marinated grated coconut.

12. Cook until it becomes toasted.

13. Add a bit of gata, onions, and bell peppers.

14. Add your cooked halal chicken.
