
As Filipinos, it is common knowledge that 'Lomi' is a specialty of Batanguenos. But in a recent episode of Pinas Sarap, we have discovered that a small barangay in the mountainous areas of Orani, Bataan also serves this dish.
According to the Head of the Cultural Heritage Preservation Division in Bataan, Jasper Merla, Batanguenos started migrating to Bataan after World War II.
Based on stories, in the late 1940s, one by one Batanguenos moved to the small Barangay Tala in Bataan due to the climate.
Back then, kapeng barako or Barako coffee is the main source of livelihood for Batanguenos and the climate in Barangay Tala in Bataan is the perfect weather for planting and harvesting kapeng barako.
Mr. Jasper Merla shared, “Doon na magsimulang manirahan ng mga Batangeno at eventually nadala nila ang kanilang culinary heritage which is Lomi ng Batangas.”
Thus, the Lomi craze in Barangay Tala, Bataan. Despite the similarities, there were also different fusions of the Lomi as time passed by.
Pinas Sarap host Kara David was able to learn how to prepare one of the newest versions of Lomi, the Seafood Lomi. To which she said, “Super lapot ng sabaw, saktong sakto lang yung pagkakaluto sa noodles pero ang talagang nagpapasarap sakanya ay yung fresh seafoods nya.”
If you want to re-create this at home, below is the recipe for the Seafood Lomi in Bataan.
Ingredients:
Shrimp
Squid
Scallops
Lobster Balls
Crabsticks
Miki
Cassava Starch
Oil
Scrambled Egg
Garlic
Onion
Soy Sauce
Salt
Pepper
Procedure:
1. In a pan, put oil, then add your shrimp, and sauté for 1 minute.
2. After the sauté, set the shrimp aside and put garlic and onion in the pan to sauté.
3. Add pepper and soy sauce. Burn it a little bit for more flavor.
4. Add your shrimp stock then put salt, pepper, and soy sauce again.
5. Let it boil for a while. Once boiling, put the Miki noodles.
6. Add your scrambled egg and cassava starch to make the mixture gooier then mix.
7. Once it boils, transfer it to a bowl.
8. Once transferred, add your toppings; shrimp, scallops, crabsticks, squid, and lobster balls.
