A Pinoy twist to this classic dessert, a definite must-try for the holidays.


 

 

Ingredients:

1 cup CDO Nata de Coco (combination of green, red, and white)
1 cup CDO Kaong (combination of green, red, and white)
1/2 cup Danes Classic Cheese
1 1/2 cups graham cracker crumbs
1/3 cup brown sugar
1/2 tsp. ground cinnamon
1/3 cup butter (melted)
500 g cream cheese
1 cup all purpose cream
1/2 lemon juice
1/2 cup condensed milk
1/2 cup unflavored gelatin cooked in 1 cup water

Procedure:

1. In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press into the bottom of an 8 or 10 inch loose bottom pan. Chill until firm.
2. In a medium bowl, beat together the cream cheese and lemon juice until soft. Add all purpose cream, condensed milk, dissolved gelatin, and beat with an electric mixer until batter becomes thick and stiff. Fold in CDO Kaong and CDO Nata de Coco. Top with Danes Classic Cheese.
3. Chill minimum of 4 hours or overnight. Just before serving, remove the sides of the spring form pan.
