A simple and colorful dish, perfect for the holidays


 

 

Ingredients:

500 g penne pasta (cooked)
2 cups Holiday whole-meat ham (cut into 1/4 inch cubes)
1 red bell pepper (chopped)
3/4 cup frozen green peas (thawed)
3/4 cup celery
1/3 cup shallots (chopped)
1/3 cup fresh parsley (chopped)
2 tbsp white vinegar
1 tbsp fresh lemon juice and zest
1 1/2 tablespoons mustard
1/4 cup mayonnaise
1/2 cup all purpose cream
1/4 cup green onion (finely sliced)

Procedure:

1. Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain; rinse with cold water and drain well. Place penne in large bowl.
2. Add Holiday Whole-Meat Ham, bell pepper, peas, celery, shallots and parsley. Whisk vinegar, lemon juice and mustard in small bowl to blend; whisk in mayonnaise and all-purpose cream. Season dressing with salt and pepper. Toss salad with dressing.
3. Cover, chill for at least 2 and up to 6 hours, tossing occasionally.
4. Serve salad cold or at room temperature.
