For the perfect breakfast, try this egg-citing recipe.


Ingredients:

 
1 150 g can San Marino Tuna in water, drained
2 tbsps oil
2 pcs eggplant, grilled and peeled
2 eggs, beaten
1 onion, chopped
2 cloves garlic, minced
1 small bell pepper, diced
100 g quickmelt cheese, grated
1 tbsp butter
Salt and pepper to taste
 
Procedure:
 
1. Sauté onions and garlic in butter.
2. Add in San Marino Tuna Flakes. Then add in bell peppers.
3. Season with salt and pepper. Then set aside.
4. Top eggplant with San Marino Tuna mixture.
5. Pour some beaten eggs on top. Then sprinkle some grated cheese.
6. Pan fry eggplant until brown on both sides.
