Lumpiang shanghai is commonly made with ground pork. Try this healthier version with Sea Quest Tuna. 


INGREDIENTS
:
 
1 can Sea Quest Tuna, drained
1 pc onion, chopped
1 pc singkamas, diced
1 pc small carrot, diced
5 stalks spring onion, chopped into two-inch length
1 egg, beaten
10-15 pcs lumpia wrapper, cut into 3x3 square inch
Salt and pepper to taste
 
For the sauce:
¼  cup banana ketchup
2 tbsps vinegar
2 tbsps brown sugar 
¾ cup water/stock
1 cup cornstarch slurry 
Salt and pepper to taste
 
PROCEDURE:
 
Mix drained Sea Quest Tuna with onion, singkamas, and carrot.
Mix in beaten eggs. This will serve as binder.
Season with salt and pepper.
Wrap mixture in lumpia wrapper. 
Fry until brown, then set aside. 
In a pan, put the banana ketchup and vinegar. Simmer for a minute before mixing.
Mix in brown sugar and stock. Bring to a boil.
Thicken sauce with cornstarch slurry. Season with salt and pepper.
Serve Sea Quest Tuna Shanghai with rice and prepared sauce.
Top with chopped spring onions.
