INGREDIENTS:
1 kilo beef tenderloin, shredded
1 tablespoon oyster sauce
1/4 cup soy sauce
1 tablespoon chicken powder
30 grams potato starch slurry
500 grams broccoli flowerrettes, blanched
2 tablespoon ginger and garlic purée
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sugar
10 grams cilantro
PROCEDURE:
1. In a mixing bowl, combine beef, one tablespoon potato starch, soy sauce, oyster sauce, salt, pepper, sugar and set aside .
2. Saute in wok ginger and garlic purée ginger. Add the marinated beef, pour chicken stock and thicken with slurry. Simmer for 5 minutes until done.
3. Place into plate and sidings with blanched broccoli .Garnish with chopped cilantro.
