INGREDIENTS:
2 kilos of whole lapu-lapu (cleaned)
2 cups mayonnaise
3 pcs. cucumber (cut into slices)
500 grams European round red radish
1 teaspoon salt
1 teaspoon white pepper
1 pc. US lemon slices
1 cup white wine
aluminum foil for wrapping
PROCEDURE:
1. Season the whole lapu-lapu with salt and pepper. Wrap it with aluminum foil then poach in water, wine, and lemon, until done. Keep it cool then remove the foil.
2. Spread the mayonnaise all over the lapu-lapu. Decorate the red radish (half-moon shape slices) all over the lapu-lapu. Garnish it with cucumber flower.
