Binagoongang bagnet? Sizzling dinakdakan? Check out this restaurant in Makati that's giving a twist to your traditional pulutan combo of sisig and beer.

At the time where bars and clubs weren't a thing, there was always a beer house.

You know, it's that place where your tito would always hang out with his friends, often sharing a beer mug or two, singing songs at the karaoke machine, and munching on their favorite steamy pulutan.

Today, beer houses are a thing of the past as gastropubs start crawling in the Metro with their foreign offerings and craft beers.

However, one restaurant in the city of Makati is giving an ode to this public recreational house and that is the Lumu Beerhouse and Filipino Kitchen.

The name "LUMU" is derived from two things: One, the phrase “love you, miss you” and two, the nickname of its chef and owner, Luigi Muhlach.

Since its inception in 2018, Chef Luigi has prided himself on being hands-on when it comes to the food that's coming out of his kitchen.

That's why in Pop Talk, he didn't shy away from promoting the best-of-the-best his restaurant can offer to Tonipet Gaba and his three guests.

For their appetizer, the 33-year-old chef offered his well-curated A-bangers sampler that boasts of different Filipino flavors in sausage form.

What's comical is that he even named each sausage from hugot lines and connected them to each ingredient.

He says, “Itong 'Nagdurugong Puso' is dinuguan, 'Ang Cheesy Mo' is caldereta with cheese, 'Like an Explosion' is menudo, 'Sisig Love' is sisig, and so much more.”

For the main course, he also did not disappoint offering several Filipino favorites like Sinuglaw, Binagoongan Bagnet, Chicken Inasal, and Crispy Tilapia.

Among the four viands, the two that stood out the most for Tonipet are the Binagoongan Bagnet and Chicken Inasal.

According to the host, the former was like tasting two dishes at the same time.

He says, “Level-up version ng binagoongan ito kasi may bagnet. So it's like eating two dishes in one sitting with cherry tomatoes on top.

“Ang ganda niya tingnan and masarap kasi may konting asim pa siya because of the mangoes. Ang bright bigla tingnan ng dish.”

Meanwhile, the reason why the Chicken Inasal is at par with the first is its topping that took inspiration from the popular Mexican salsa called pico de gallo.

Chef Luigi says, “'Yung sa Chicken Inasal, we topped it with salted egg, so parang pico de gallo. Ganun 'yung timpla niya.”

The dish is also heightened with its tender, moist meat inside.

As per Tonipet's review, “It's essential na moist siya dahil nakaktulong siya sa pag-tenderize ng meat. Napakalambot niya, it's one whole chicken tapos sulit na sulit siya kasi ma-e-enjoy ng marami.”

Check out LUMU Beerhouse and Filipino Restaurant at 3/F Greenbelt 3, Ayala Avenue, Makati City. It's open from 11 am to 12 am (Monday to Thursday) and 11 am to 2 am (Friday to Sunday).
