
Metro Manila has a wide array of Japanese restaurants that promise the “best of the best” of what the Land of the Rising Sun has to offer. Still, nothing beats having a history of culinary experience to make it truly the best.
Cue in Fumizen Japanese Restaurant found in Sgt. Esguerra Ave, in Quezon City, an international franchise from a 40-year-old restaurant from Chiyoda, Tokyo that specializes in tonkatsu.
Their general manager, Richard Ang, tells Pop Talk, “ We are actually a franchise here, which started 40 years ago in Chiyoda Tokyo, Japan.
“Our main dish is tonkatsu. We have different versions, and we imported it here with the help of Japanese chefs and ingredients.”
To try out if Fumizen lives up to its hype, host Tonipet Gaba, with guests Lexi Gonzales and Chef Gelo Guison, tries out three bestsellers from the famed restaurant.
Upon opening the parcel, Chef Gelo was floored to see the beautiful presentation of food offered by Fumizen.
He tells Tonipet, “Presentation pa lang, it really reminds me of Japan. Sa kanila medyo standard na yung ganitong packaging. Ang ganda! It's really impressive and super beautiful.”
1. Grilled Unaju 200g set - ★★★★★
Price: Php 850.00
What is it: Freshly grilled eel glazed with caramelized unagi sauce and served with Japanese rice, miso soup, shredded cabbage, and seasonal fruit.
“Napaka-generous ng portion ng unagi. I think, for the price, it's commensurate with the serving size kasi may kamahalan itong unagi. So parang may solid piece ka ng unagi and then with the rice, tamang tama siya,” Chef Gelo observes.
“What I like about their unagi is 'di siya masyadong “earthy.” Minsan lasang lupa, e. So ito, very pleasant, nice glaziness, nice sweetness, the right smokiness.”

2. Hire (Pork Tenderloin) Katsudon - ★★★★
Price: PhP 425.00
What is it: Thick yet soft tenderloin cutlet with egg, sauteed onions cooked in Fumizen's special sauce and served with Japanese rice, miso soup, shredded cabbage, and seasonal fruit.
Chef Gelo says, “I like katsudon when it's cut very thick.
“Parang may finesse 'pag ganito ang pagka-cut. Very flavorful din and tender ng meat at 'yun yung nakakagulat. So baka it's brined? Kasi hanggang sa loob 'yung taste, e. Tapos tender pa s'ya.”

3. Fumizen Tonkatsu Set A - ★★★★
Price: PhP 725
What is it: Crisp, golden loin tonkatsu with grilled buttery Gindara fish served with Japanese rice, miso soup, shredded cabbage, and seasonal fruit.
The renowned chef explains, “You would think that the katsudon and that the tonkatsu are the same, but it's different.
“But, you know what? I tried my first slice without sauce. 'Yung ibang purist who'd eat tonkatsu sa Japan ayaw nila ng sauce, e, ito truffle sauce so it's a step up.
“Actually, masarap siya as it is, but with the tonkatsu sauce, it just heightens the flavors.”
