Folded kimbap

Learn how to make one of the internet's emerging food trends, folded kimbap.

The internet has once again gifted us with another interesting food trend, the folded kimbap.

Kimbap is one of South Korea's most "humble" foods and is sold by vendors in snack trucks or made easily at home with simple ingredients.

It is made up of a seaweed sheet, rice, and fillings like various kinds of meat and vegetables which are layered and then rolled together. It is then cut into bite-sized pieces when served.

While rolling kimbap is not that difficult, it does require a bit of skill or at least a tool like a bamboo rolling mat.

It is the cutting that seems to be more complicated as you risk squishing the roll and having the fillings fall out if you don't have a very sharp knife.

There are already a few variations of the dish, like smaller-sized mayak kimbap. "Mayak" means "drug" as the taste is said to be concentrated and addictive. This is also called ggoma kimbap which means "child" kimbap because of its smaller size.

Another variation is the samgak kimbap or the triangle kimbap, a quintessential convenience store fare and favorite of students.

It seems that the folded kimbap might soon be joining these popular varieties as it is so easy to make--no rolling and cutting required.

Folded kimbap ingredients

One simply must cut a slit halfway across the seaweed sheet and place rice, cooked meat, pickled vegetables, and other kimbap fillings of choice in each quarter.

The slit is then used as a guide as each quarter, along with the fillings, is folded onto the next.

The result is something similar to the Japanese onigirazu or rice sandwich or sushi sandwich.

The folded kimbap comes to us indirectly via TikTok. It is said to have originated from a food hack where one would make a cut halfway on the tortilla and place fillings on every quarter and is folded using the cut as a guide.
