INGREDIENTS:
500 grams green fettuccini pasta, pre-cooked
2 cups sugar beets juice
2 cups tomato concasse
500 grams pork brain
1 cup ketchup
1/2 gram saffron
2 pcs peeled stuffed green olives
1 pc black olive
2 pcs egg white, poached
50 grams butter
1/2 teaspoon salt
1/2 teaspoon pepper
PROCEDURE:
1. Toss green pasta in butter, season with salt and pepper. Set aside.
2. Sauté onion, tomato concasse and pork brain. Add sugar beets and juice. Simmer until done. Set aside.
3. Place the beaten white eggs into ramekin and steam until set. Cool for sometime.
4. Place pasta in platter and top with brain sauce. Scoop the egg white into balls and put on top of the brain sauce. Decorate with egg and slices of green and black olives. Sprinkle saffron on the side of egg balls.
