Sumptuous summer sensations from Café Mediterranean

The Mediterranean lifestyle is all about enjoying life to the full through fresh, healthy meals shared among friends and family.  For the month of May, the Café Mediterranean culinary team designed an especially enticing array of fresh and hearty dishes that are so delicious and decadent, one forgets that it’s just as healthy as it is divine!
 
At Café Mediterranean, one can pause to taste, smell and enjoy a tradition inspired by Mediterranean culture.  Each dish is a collection of “taste memories” from the world’s coastal kitchens, making the dining experience a gustatory escape to exotic places, with every bite.  The April & May Specials are no different, just a bit more exciting! Adding a dash of secret spices and authenticity to the menu are recipes shared by Café Med owner Marla Moran’s Greek friend and a gracious Asian neighbor – enjoy!  
Café Mediterranean serves fresh, healthy dishes this summer.
 
The Specials Menu Must-Try’s are: Dakos – A traditional meze recipe of fresh tomatoes, extra virgin olive oil, Greek oregano and crumbled feta on a large barley rusk, it is often called the “Greek bruschetta”.  This special recipe came straight from Greece, courtesy of a Greek friend from the island of Crete. Portobello On Puff Pastry – A lovely starter or light meal of grilled Portobello strips, fresh basil and caramelized onions with balsamic vinaigrette topped with crumbled feta, it is served with Shepherd’s Salad.  
 
Salad Niçoise – The traditional French salad is reinvented into this non-traditional version, with fresh grilled tuna instead of the regular canned tuna.   Chickpea Salad with Curried Yoghurt – Borrowed from an Asian neighbor, it is a wonderful salad with spinach, garbanzos, carrots, cucumbers and other veggies lightly sautéed and topped with zesty yoghurt.   Roasted Veggie Chermoula – Roasted broccoli, potatoes, carrots, squash, onions and tomatoes coated with Chermoula which is a mix of herbs, spices, lemon juice, garlic and coriander, used in Algerian, Moroccan and Tunisian cooking.  Ratatouille – Due to popular demand, they decided to keep this much-loved comfort dish on the menu a bit longer, so more guests can enjoy this super healthy, classic French Provençal stewed vegetable dish.  Usually a side dish, it is great with bread or with couscous as a main course.  Seared Mediterranean Tuna Steaks – A fresh tuna dish, topped with a Tuscan-style salsa and house-made potatoes on the side.  
 
The Mediterranean culture of good food mixed with good company and lively conversation is so familiar to Filipinos, it is almost like dining at home.
