Grilled recipes for your summer outing

Summer outings are not complete without delicious food!

In a recent episode of “Good News,” Chef Tatung Sarthou of Tatung's Garden Restaurant shared his signature grilled recipes that you can also serve to your family or barkada.

Grilling is ideal for outings. Most grills are portable–all you need is some charcoal and you’re good to go. Some resorts even provide grilling equipment that guests can freely use.

Here are some delicious grilled recipes from Chef Tatung:

Grilled coffee-rubbed steak



Ingredients:

Steak
1 tbsp. chili powder
½ cup olive oil
1 tbsp. coffee granules
1 pc. lemon
Salt and pepper

Directions:

Season the steak with olive oil. Combine chili powder, salt and coffee and then rub to the steak.

Chef Tatung's tip: “Kailangan, nakahati sa dalawang level ng init ang griller, ang high heat at low heat. Ililipat kasi sa low heat ang karne pag medyo luto na ito.“Grill the steak for five to six minutes, depending on the thickness.

For the side dish, combine cabbage, salt, pepper, onions and garlic. Add some butter, depending on your taste, and grill for three to five minutes.

For the sauce, combine pepper, salt, lemon juice, meat drippings. Pour this mixture over the grilled steak.

Cost: P140 for 3 to 4 servings

Pork Barbecue in Tomato and Bagoong Sauce



Ingredients:

1 tbsp. honey
1/2 cup bagoong
1 cup tomatoes, diced
Calamansi juice
Sugar
Pork kasim, cut into chunks

Directions:

Season the pork with salt, pepper, garlic and calamansi juice. Pour oil and honey. Mix well. Set aside for at least 30 minutes.

To make the bagoong sauce, sauté the garlic, onion, bagoong, honey and diced tomato. Season with salt and pepper. Cook until the mixture reaches a pasty consistency.

Chef Tatung's Tip: Soak the barbecue sticks in water for at least an hour. “Para kapag inihaw mo, hindi siya nagiging uling. Kasi kapag tuyo na yung stick niyo, hindi pa luto yung karne, wala nang natitirang stick.”

Put the pork chunks on the barbecue sticks. Grill. Brush the bagoong sauce on the barbecue before serving.

Cost: P105 for 6 servings

Grilled Juicy Burger



Ingredients:

1/2 kilo pure ground beef
1 pc. onion, sliced
1 clove garlic
1 tbsp. soy sauce
2 pcs. tomatoes
Salt
Pepper
Cheese
Lettuce
Bread buns

Directions:

Form the pure ground beef into patties. Season with salt and pepper. Grill each side for three to four minutes.

Grill onions, cheese and buns. Assemble.

Cost: P135 for 2 to 4 servings
