
With the continued popularity of avocado toast, more and more people are seeking new ways to incorporate the nutritious fruit into more recipes.
Avocado, also known as alligator pear, has 20 different vitamins and minerals. It has a higher potassium content than bananas, contains the brain booster oleic acid and has folate which is good for cell regeneration.
Chef Jaime Bañez shares his recipe featuring avocado.
Creamy Avocado Pasta
Ingredients:
avocado
pasta
garlic
onions
butter
cashew nuts
grated cheese
lemon juice
vegetable stock
cream
salt
pepper
How to prepare:
1. Cook pasta according to pack instructions. Set aside.
2. Saute onions and garlic in butter.
2. Transfer to a blender with avocado cashew nuts, grated cheese, lemon juice, and vegetable stock. Blend until smooth.
4. Add cream and blend a little more.
5. Return to the pan and add butter. Simmer until it thickens.
6. Add salt and pepper to taste.
7. Toss the pasta in the sauce.
