
Mung bean or Munggo, is often eaten in Filipino homes on meatless Fridays and prepared in humble dishes.
Aside from being relatively inexpensive, it is also rich in nutrients like folate and magnesium. It is also rich in fiber and antioxidants.
Chef Jai Bañez prepared three unique recipes where one can use the humble Munggo.
Here's the recipe for his Munggo Kare Kare.
Ingredients
annatto oil
garlic
onion
munggo
chicken stock
peanut butter
bagoong
coconut milk
salt and pepper
How to prepare
1. Saute garlic and onion in annato oil
2. Add munggo and saute for 1 to 2 minutes
3. Add chicken stock and boil for 5 mins
4. Add peanut butter
5. Add bagoong
6. Add coconut milk
7. Season with salt and pepper to taste
8. Simmer for 8 to 10 minutes
9. Serve with preferred vegetables
