According to her website, start by cutting the kale, brussels sprouts, and radicchio crosswise in thin shreds, as you would cut cabbage for coleslaw. After that, place them in a large bowl. In another small bowl, whisk together the lemon juice, olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Remember to reserve the rest of the dressing and just pour enough on the salad to just moisten it. Then, add the big shards of Parmesan cheese and dried cranberries to the salad and toss it carefully. You may check for seasonings or add more vinaigrette. Serve the salad cold or at room temperature.
