Why is carabao milk the most complete food?

Carabao dairying is now a booming industry in the Philippine landscape.

It is one of the sources of income for many local farmers in Central Luzon, and one of the most popular products that they produce from carabao milk is kesong puti.

In San Miguel, Bulacan, some of their best-selling snacks include recipes that use kesong puti like potato bread, cheese nuggets, and empanada.

Drew Arellano shared, "Alam mo ang sarap ng kesong puti na 'to dahil 'yung alat niya ay saktong sakto."

Since carabao milk is the main ingredient of kesong puti, it is perfect for health buffs too!

Carabao milk is known to be a nutritional powerhouse as it is low in cholesterol and high in calcium, some dubbed it as the most complete food.

To enlighten us more about the underrated superfood, we asked chef and registered nutritionist-dietitian Malou Caudal to explain why is carabao milk considered as such.

She said in an e-mail interview, "Carabao's milk contains protein, fat, lactose, vitamins, minerals, and water, making it the most complete food."

She also noted that its nutritional content is higher compared to cow's milk and goat's milk.

"Carabao's milk is more nutritious because it has 58 percent more calcium, 40 percent more protein, and 43 percent less cholesterol."

The culinary nutritionist-dietitian then added, "It's thicker and creamier due to its higher content of fat and protein compared to cow or goat's milk."

Moreover, Malou shared that carabao milk also contains riboflavin, vitamin A, vitamin D, and phosphorus that are needed for our overall health.

She said, "It contains riboflavin needed for normal growth, the agent against skin swelling, inflammation of the lining of mouth and tongue, and dizziness.

"Its Vitamin A content is good for clearing eyesight while Vitamin D, calcium and phosphorus are valuable for strong teeth and bones."
