HALLOWEEN RECIPE: Crispy Dinuguan ala Chef Jose Sarasola

Kapuso cutie chef Jose Sarasola revealed in a recent episode of Unang Hirit that he takes Halloween seriously, as evidenced by his awesome Halloween costumes over the years.

For his segment on Unang Hirit, he dressed up as Johnny Depp's character in Alice in Wonderland, the Mad Hatter.

However, chef Jose didn't only served looks, but he also cooked up a mouthwatering dish perfect for Halloween, the Crispy Dinuguan.

According to chef Jose, his Crispy Dinuguan is basically a deconstructed version of the classic Filipino pork blood stew.

So, if you want to try Chef Jose's recipe for your at-home Halloween celebration, below are the ingredients and procedure.

Ingredients:

White wine vinegar
Cooking wine
Pork blood
Pork intestines
Pork liver
Garlic
Onion
Ginger
Fish sauce
Black pepper
Tamarind/sampaloc
Green chili pepper/siling haba
Lemongrass/tanglad
Water

Procedure:

1. Add vinegar to the pork blood and set aside.
2. Put the innards (pork intestines and liver) into the pot with water and let it boil for ten minutes and set aside.
3. In another pot, sauté garlic and onion.
4. Meanwhile, boil the tamarind in a separate smaller pan.
5. Add the ginger to the galirc and onion, then cooking wine and fish sauce.
6. Add white wine vinegar, water, and black pepper.
7. Let it boil for 30-35 minutes.
8. Extract juice from the boiled tamarind.
9. Add the tamarind juice to the pan.
10. Add vinegar and green chili pepper.
11. Add the pork blood and tanglad and let it boil.
12. Slice the innards to your desired cut and fry them.
13. Add salt to your dinuguan sauce.
