RECIPE: Fish Morcon Hubad ala Chef Jose Sarasola

Morcon is one of the staple dishes Filipinos serve during Noche Buena. Although it requires a lot of work, the rich, tasty and flavorful Christmas dish is totally worth it.

In a recent Unang Hirit episode, cutie Chef Jose Sarasola shared his own take on the morcon.

He added a healthy twist to the Filipino Noche Buena favorite by using fish instead of using beef or pork.

If you want to make this healthy version of morcon for Noche Buena this year, below are the ingredients and procedure

Ingredients:

  • fish fillet
  • salt
  • pepper
  • lemon juice or lime (calamansi)
  • butter
  • garlic
  • onions
  • carrots
  • celery
  • luncheon meat
  • hotdog
  • eggs
  • breadcrumbs

Procedure:

  1. Season fish with salt, pepper and lime or lemon juice.
  2. Dip fish in eggs and coat with breadcrumbs.
  3. Fry fish for 3 to 5 minutes.
  4. For the toppings, melt the butter in a separate pan and sauté the onions, garlic, carrots and celery.
  5. Add luncheon meat and hotdog.
  6. For the sauce, put the evaporated milk, grated cheese and cornstarch in a separate pan. Wait for the cheese to melt.
  7. Boil eggs for additional toppings.
  8. Put the toppings and white sauce on top of the fried fish and serve.
