Media Noche Dessert Recipe: Flavored pudding

We're just a few days away from the year 2021, and every Filipino knows that when it comes to Media Noche, a special feast on the eve of the New Year, abundance is king.

The lavish midnight feast, celebrated with family and friends, is a Filipino tradition that symbolizes hopes for prosperity in the coming year.

There is also a tradition that anything served on the dinner table should be round in shape, like fruits or any other food that's round.

And if there's anything that seals the deal, it's the quality dessert you present on your table.

If you're still uncertain about what kind of dessert to whip up for Media Noche, try Unang Hirit's guest entrepreneur Vania Silverio's colorful and delicious flavored pudding.

Vania's pudding is made out of jelly with a velvety texture. It can also take on a vast range of flavors, from rich chocolate to delicate strawberry to fresh matcha to bittersweet coffee.

Below are the ingredients and procedure of Vania's Strawberry White Choco Pudding, which comes in three layers.

Ingredients:

First layer:
Fresh strawberries
1 sachet strawberry agar
4 tbsp. sugar

Second layer:
2 tbsp. clear agar
2 cups of fresh milk
½ cup of water
3 tbsp. sugar
½ cup of white chocolate

Third layer:
3 tbsp. clear agar
1 cup of preserved strawberry
2 cups of strawberry milk

Procedure:

First layer: Strawberry jelly with fresh strawberries
1. Assemble the fresh-cut strawberries in the pudding mold.
2. Next, mix strawberry-flavored gelatin, sugar, water into a pan.
3. Stir the mixture until gelatin and sugar are dissolved. Bring to boil.
4. When done, take a little serving of the mixture and pour it into the pudding mold with the fresh-cut strawberries. Make sure the fruits are set in place.
5. When the jelly is half set, pour the rest of the mixture into the mold.

Second layer: White chocolate
1. Mix the powdered gelatin, white sugar, water, milk, and white chocolate into a pan.
2. When the white chocolate has melted and the dry ingredients have dissolved, pour the mixture into the mold on top of the first layer of jelly.

Third Layer: Strawberry puree
1. Blend the strawberry and strawberry milk. Set aside.
2. In a pan, mix clear agar, strawberry milk powder, sugar, and water.
3. Next, add the puree into the mixture.
4. Keep stirring the mixture until smooth.
5. When done, pour the mixture into the mold, on top of the two layers of jelly.
6. Put in the fridge for three to four hours to set.
