Curry buns from Black Butler


Here is a recipe based on the curry buns as seen in the popular anime 'Black Butler.'

Popular anime series Black Butler tells the story of young aristocrat Ciel Phantomhive and his loyal butler Sebastian Michaelis.

Sebastian is actually a demon disguised as a butler and is helping Ciel seek revenge for the murder of his parents. In exchange for his services, Sebastian can eat Ciel's soul.

Black Butler is the anime adaptation of a 2006 manga series also called Black Butler.

In one of the anime's episodes, Sebastian enters a cooking competition in a curry fair. His recipe of curry buns is met with ridicule but later wins over the judges and the audience.

The unique thing about his recipe is the use of chocolate to enhance the flavor of the curry.

Jimmy Wong of Feast of Fiction created a recipe based on the curry buns in the anime.

Here's how to make it.

Ingredients

Dough:
2 cups bread flour
1/4 cup cake flour
1 teaspoon yeast
1/2 cup warm water
1/4 cup water
3 teaspoon sugar
1 teaspoon salt
1 egg (beaten)
Panko Bread crumbs

Curry:
1 Russet potato, peeled
2 carrots, peeled
10 mushrooms
1 large onions
beef
garlic
ginger
1 tbsp curry powder
1 tbsp garam masala
1/2 tsp cayenne pepper (to taste)
2 cubes curry roux
1 tbsp tomato paste
1 cup of cooking wine
1 cup of water
1 cup of beef broth
cooking chocolate

Procedure
1. Activate yeast in warm water
2. Combine bread flour, cake flour, sugar and salt
3. While mixing, add activated yeast, eggs, and remaining water
4. Knead the dough until it forms
5. Allow the dough to rise by letting it rest covered with a damp towel
6. Chop onions, carrots, mushrooms and potatoes
7. Mince ginger and garlic
8. Cut beef into chunks
9. Soften onions in a pan then add ginger, garlic, curry powder, and tomato paste
10. Saute for a few minutes then add the beef and red wine
11. When beef is half cooked, add beef broth and water then bring to a boil
12. Skim off the scum then add the carrots, potatoes, and mushrooms
13. When potatoes are cooked, add Japanese curry roux, cooking chocolate, garam masala and cayenne pepper
14. Stir then set curry aside to cool
15. Knead the risen dough then slice into small pieces
16. Roll the sliced pieces into balls then flatten with a rolling pin
17. Stuff the curry inside the dough then form into a bao shape
18. Flatten slightly then let it rest
19. Dip the buns in beaten egg wash then coat with Panko breadcrumbs
20. Deep fry in a pot of oil
