Here is a recipe for tonjiru as seen in the Japanese television series 'Midnight Diner.'

Midnight Diner is a Japanese television series based on a manga of the same name written and illustrated by Yarō Abe.

It is an anthology which tells the different stories of various patrons of a small diner located in Shinjuku.

The television series proved to be success and has ran for five seasons, with two feature films.

It has also spawned remakes in South Korea and China.

Part of the series' charm is the diner's mysterious chef who is simply called "Master," played by Japanese actor Kaoru Kobayashi


Master can make any dish as long as he has the ingredients for it.

Aside from that, Master and his diner only has four items on his menu namely tonjiru, sake, beer and shōchū--a kind of Japanese distilled liquor.

Food vlogger Moviekitchen shared a recipe based on the tonjiru--or pork and vegetable miso soup--as seen in the series Midnight Diner.

Here's how to make it.

Ingredients
pork belly
radish
burdock
carrot
shiitake mushrooms
green onion
tofu
konjac jelly
friend tofu
sesame oil
soy sauce
miso

Procedure
1. Chop the vegetables and tofu into appropriate sizes for soup
2. Rip the konjac jelly into chunks by hand
3. Stir fry pork belly in sesame oil in a pot over medium heat
4. Once pork turns white, add the vegetables, tofu and konjac jelly and stir fry for 2 minutes
5. Pour water to submerge the ingredients and bring to a boil
6. Skim off the scum and boil covered on low heat for 10 minutes
7. In a small bowl, mix miso and soy sauce
8. Dissolve the miso and soy sauce mixture slowly into the soup in the pot using a ladle
9. Add tofu and boil for another 5 minutes
10. Serve topped with chopped green onion in a bowl

Miso is a paste made from fermented soybeans.

It is a staple in Japanese cuisine and is used in various sauces, spreads, or soup and even in pickling vegetables and meat.
