Get your much-needed dose of immunity-building iron with this tasty Oatmeal Cream Pie recipe.

During this very challenging time, it's important for people to eat dishes that are not just tasty but also healthy, especially foods that are rich in immunity-building nutrients such as oats, which is a good source of iron.

Aside from iron, oats is also a natural source of many other nutrients such as thiamin (Vitamin B1), zinc, folate, protein, fiber, and selenium.

That's why if you want to keep your immune system strong, it's good to include oats or oatmeal into your meal plan every day to acquire the much-needed daily dose of iron.

Chefs Miko Aspiras, Nicco Santos, and Allen Buhay recently partnered with Quaker to create immunity-building recipes. Among these is the Oatmeal Cream Pie recipe.

To recreate this, you'll need the following ingredients.

For the cookies:
● 3 cups (240g) Rolled Oats*
● 1 and 1/4 cups (2.5 sticks; 290g) unsalted butter, softened to room temperature
● 1 cup (200g) packed dark brown sugar
● 1/2 cup (100g) granulated sugar
● 1 large egg, at room temperature
● 2 teaspoons pure vanilla extract
● 1 Tablespoon dark molasses**
● 1 and 1/2 cups (187g) all-purpose flour (spoon & leveled)
● 1 teaspoon baking soda
● 1/2 teaspoon salt
● 3/4 teaspoon ground cinnamon
● 1/4 teaspoon ground cloves***

*Use Instant Oats as an alternative
**Use honey as an alternative
***Use nutmeg as an alternative

For the cream filling:
● 3/4 cup (1.5 sticks; 175g) unsalted butter, softened to room temperature
● 3 cups (360g) confectioners' sugar
● 3 Tablespoons (45ml) heavy cream
● 1 and 1/2 teaspoons pure vanilla extract
● salt, to taste

Baking the cookies

To make your very own Oatmeal Cream Pie, start off by baking the cookies. Here are the seven steps:

1. Preheat the oven to 190°C. Line a large baking sheet with parchment paper or silicone baking mat then set aside.
2. Using a mixer, cream the butter and sugars together on medium to high speed for about 1 minute until light and creamy.
3. Beat in the egg, vanilla, and molasses, scraping down the sides as needed then set aside.
4. Whisk the flour, baking soda, salt, cinnamon, cloves, and oats in a medium bowl.
5. With the mixer running on low, slowly add the dry ingredients to wet ingredients. The dough will be quite thick, and you may have to mix it all manually after a few seconds in the mixer.
6. Drop dough with a large cookie scoop or equal to that of 2 tablespoons. Make sure to drop each ball of dough 3 inches apart as to keep them from sticking together when they spread.
7. Bake for 10 minutes or until cookies are lightly golden around the edges. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Preparing the filling

After baking the cookies, it's now time to prepare the cream filling in five steps:
1.Using a mixer, beat butter on high speed for about 1 minute until creamy.
2. Add the confectioners' sugar and beat on medium speed for 1-2 minutes.
3. Pour in heavy cream and vanilla extract then beat on high speed for 2-3 minutes until fluffy.
4. Taste and season with salt as needed. If filling is way too thick, add a couple more teaspoons of heavy cream.
5. Spread 1.5 tablespoons of cream filling on the flat side of half of the cookies and place the remaining cookies on top.

This Oatmeal Cream Pie recipe can make up to 14-15 cookie sandwiches, so it's perfect to share with your loved ones or even sell online for extra income. Just don't forget to have some yourself to get your needed daily dose of immunity-building iron.
