Richard Gomez carbonara recipe


In a new episode of 'Goma at Home,' Richard Gomez shares his four-ingredient carbonara.

Four high-quality ingredients make up the simple carbonara recipe of actor and politician Richard Gomez.

Still in the outdoor kitchen in his home in Ormoc, he shared his carbonara recipe in the latest episode of his YouTube series Goma at Home.

"When you say pasta carbonara, it's one of the simplest pasta dishes that you can make. Some people, they have different versions," he says as he introduces the dish.

"They put in milk. They put in cream or they put in mushroom sauce. But today, what we're doing is a very simple carbonara dish," he adds.

Traditional carbonara does not use cream or milk but instead derives its sauce from a mixture of eggs and cheese.

Richard's carbonara follows this traditional recipe and also uses guanciale or cured pork cheek.

Ingredients
guanciale
5 to 6 egg yolks
1 whole egg
parmesan cheese
pasta
salt and pepper to taste

Procedure
1. Take the rind off the guanciale and cut into small cubes
2. Put in a skillet for about 10 minutes to render the fat
3. Boil the pasta according to package instructions
4. In a bowl, mix 1 whole egg, 5 to 6 yolks, and grated parmesan cheese
5. Add a bit of pasta water to dilute
6. Add in the guanciale
7. Add pepper to taste and mix
8. Add the mixture to the pasta and mix
9. Top with grated parmesan and serve
