Recipe: Roast Beef Sirloin in Mushroom Gravy Sauce


INGREDIENTS:

2 kg sirloin
1 bulb garlic, peeled 
2 tbsp Dijon mustard
¼ cup olive oil
2 tbsp fresh thyme
2 tbsp fresh rosemary
2 cups beef stock
onion
carrots
celery
bayleaf
salt
pepper
brown mushroom ragout
250g button mushroom, chopped
250g shiitake mushroom, chopped
1 tbsp olive oil
2 cloves garlic, diced
1 small onion, diced
½ cup white wine
roast beef drippings
½ cup cream
parsley

 
PROCEDURE:
1. Preheat oven to 375º.
 
2.Tie sirloin with a butcher's twine then poke holes on sirloin. Insert cloves of garlic. In a bowl, combine mustard, olive oil, thyme, and rosemary then season with salt and pepper.  Add in sirloin then massage.  Let this marinade for at least 3 hours.
 
3. Sear sirloin. On a roasting pan, add onions, carrots celery, stock and bayleaf. Top seared beef, then cover with aluminum foil and let it roast for 1 hour covered, then 30 minutes uncovered.  Let it rest for 10 minutes before slicing.
 
4. Brown mushroom ragout.
 
5. Heat pan and oil then sauté onion and garlic until fragrant. Add mushrooms and continue to sauté until mushrooms start to wilt. Deglaze with white wine. Simmer until wine has slightly reduced then add roast beef drippings and cream. Simmer for a minute.

6. Add parsley then season with salt and pepper.
