Recipe: Spicy Kalderetang Kambing

INGREDIENTS:
500 grams chunk of pre-cooked kambing meat
100 grams red onions, cubed
50 grams chopped garlic
2 siling labuyo
1/2 cup cooking oil
1 cup tomato paste
2 cup chicken stock
1/2 liver spread
1/4 cup vinegar
1/2 teaspoon black pepper
1/4 cup green olive and black olives
1/2 cup pimientos
1/2 cup grated cheese
1/2 teaspoon salt

 
PROCEDURE:
1. Saute the garlic in oil. Add onion and saute until translucent. Add tomato paste, liver spread, vinegar, chicken stock, and simmer for 5 minutes. Season to taste.
 
2. Add soft kambing meat, olives, and pimientos, then place in plate and top with grated cheese just before serving.
