Recipe: Adobong Lamb Chops


INGREDIENTS:

1 rack of lamb
¼ cup vinegar
¼ cup soy sauce
1 tsp crushed black pepper
1 pc bay leaf
2 heads roasted garlic
½ cup red wine reduction
brown sugar to taste
2 pcs sweet potato
½ cup chestnuts
1 cup milk
salt
pepper
mixed vegetables

 
PROCEDURES:
1. Heat pot until lightly smoky then sear rack of lamb. Add vinegar, soy sauce, crushed black pepper, bay leaf and roasted garlic. Simmer until lamb is cooked.
 
2. Remove lamb from pot then simmer sauce until reduced by half then add red wine reduction. Season with salt and pepper.  Add brown sugar to taste.
 
3. In a bowl combine sweet potato, chestnuts and milk then mash.  Season with salt and pepper. Serve with adobong rack of lamb and red wine reduction.
