Recipe: Grilled Tuna with Coffee and Hollandaise Sauce

INGREDIENTS:
500 grams tuna loin fillet
1 tablespoon roasted black powder coffee
1 cup Hollandaise sauce
50 grams fresh button mushroom slices
1 tablespoon olive oil
1 tablespoon all purpose cream
5 grams chopped parsley
1/2 teaspoon salt
1/2 teaspoon white pepper

 
PROCEDURE:
1. Season with salt and pepper, then marinate tuna loin in 1 teaspoon of coffee. Pan-sear in 2 minutes or half done and set aside.
 
2. Sauté the mushroom in olive oil, and set aside.
 
3. Place in baking tray pan-seared tuna loin and top with mushroom. Pour the mixture of hollandaise, coffee and cream and bake in the salamander until golden brown.
 
4. Place on plate garnished with chopped parsley.
