Recipe: Pineapple Banana Flambe

INGREDIENTS:
900 grams bananas
1 medium pineapple, peeled, cored and cut into 2.5-cm/1-inch chunks
100 grams dried raisins
50 grams butter
100 grams sugar
3 tablespoons orange juice
1/2 teaspoon mixed spices
25 grams hazelnuts, chopped
4 tablespoons dark rum
PROCEDURE:
1. Peel and thickly slice the bananas into a shallow oven-proof dish. Top with the pineapple and raisins. Place the butter in a saucepan and heat until melted.
2. Stir in the sugar, orange juice and spice and heat until well mixed. Pour over the prepared fruits. Cover tightly and cook in a moderately hot oven 200c/400f for 20 minutes.
3. Remove from the oven and sprinkle with the nuts. Heat the rum in a small sauce pan. Ignite and pour over the fruits. Serve once.
