RECIPE: Milestone Birthday Cake ala Mike Tan

Actor Mike Tan is one of the celebrities who unlocked a new skill during the quarantine period. He went from not knowing how to bake to making monthly milestone cakes, and it all started during their second daughter Priscilla's first month celebration.

In his recent guesting on Mars Pa More, Mike shared the story of how he began tapping into his inner baker during the lockdown.

According to Mike, due to anxieties about COVID-19, he and his wife decided that the safest thing to do for Priscilla's first month celebration is to bake the milestone cake themselves.

After asking their pastry chef friend for a basic recipe that they can easily follow, Mike and his wife were able to whip up a milestone cake for Priscilla.

The couple has now baked seven milestone cakes for Priscilla and have also started their own online shop that offers cinnamon rolls.

If you want the cake for your child's next celebration to be a labor of love, go ahead and try your hand in making a milestone cake.

Below are the ingredients and procedure on how to bake a milestone cake ala Mike Tan.

Ingredients:

  • granulated sugar
  • flour
  • baking powder
  • salt
  • olive oil
  • milk
  • butter
  • cream cheese
  • confectioners' sugar
  • heavy whipping cream (35-40% fat)
  • soaking syrup (1 part-granulated sugar and 2 parts water)

Procedure:

For cake bread:

  1. Preheat the oven to 180 degrees Celsius.
  2. Combine 4 eggs and 2 cups of granulated sugar in the mixer.
  3. Combine 3 cups of flour, baking powder and half teaspoon of salt.
  4. Transfer the flour to the mixer.
  5. Slowly add the olive oil and milk.
  6. Repeat the process until the flour has been mixed with the batter.
  7. Grease the baking tray with butter.
  8. Pour the batter into the baking tray.
  9. Bake it for 25 minutes. Repeat the same process for the second layer of cake.

For cake frosting:

  1. Blend 227 grams of cream cheese in the mixer to flatten the texture. Make sure that the cream cheese is at room temperature.
  2. Add the sifted confectioners' sugar.
  3. Beat the heavy whipping cream until desired thickness is achieved.
  4. Combine the cream cheese mixture and the heavy whipping cream.

Finishing touches:

  1. Trim off the top and the edges of the cake bread.
  2. Brush a layer of soaking syrup into the bread to keep it moist longer.
  3. Coat the top of the cake bread with frosting.
  4. Put the next layer of cake bread on top of the first one, then keep in the fridge for 5 minutes.
  5. Trim the bread to your desired shape.
  6. Coat with frosting and add your preferred toppings.
