When it comes to Ilocano cuisine, the flavors must be robust and savory, just like the sweetness added to coffee and the deliciousness infused in Ilocano delicacies - products derived from sugarcane.

During the Balicucha Festival, residents of Sta. Maria, Ilocos Sur proudly showcased the largest balicucha, measuring a whopping 15 inches. 

It stands out compared to the usual 2-inch varieties found in markets.

But just as there is the largest, there is also the smallest contender - a mere centimeter in size.

Apart from balicucha, the event also showcased basi, a delicious drink made from sugarcane extract, and of course, the longest sugarcane.

The festival also featured contests for livestock such as carabaos, cows, and goats.

Balicucha or balikutsa is a traditional pulled sugar candy, made by boiling pure sugarcane juice until it caramelizes and becomes a syrup. It is then pulled and folded repeatedly until it turns into a creamy white color.

It is the town’s One Town, One Product (OTOP), as mentioned by Michael Escobar from the Sta. Maria Tourism Office.

“Since yung ‘One Town, One Product’ namin ay balicucha, marapat lamang na i-showcase natin ang balicucha industry,” he said.

The local government has reportedly initiated programs to boost the sugarcane industry and support sugarcane farmers.

“Thru seminars and trainings, tsaka pinapakita rin namin [sa mga ] programa yung kung ano ang impact ng tourism, so ine-embrace naman nila ‘yun, naiintindihan naman nila,” Escobar said.
