How to make Transforming Furikake Gohan from 'Food Wars! Shokugeki no Soma'
Food Wars! Shokugeki no Soma is 2015 anime series based on a manga of the same title which began in 2012.
It tells the story of a young man named Soma Yukihira who aspires to be a great chef.
He enrolls at an elite culinary school called Tōtsuki Culinary Academy where students go head to head in food competitions called "shokugeki."
One of the first dishes seen in the anime is the Transforming Furikake Gohan.
Soma cooks the dish during his enrollment test at the Tōtsuki Culinary Academy. It is also one of the secret dishes in his father's restaurant.
The dish simply is made up of eggs over rice but what makes it special is the gelatinous chicken stock or aspic that gives it much of its flavor.

Here's how to cook it.
Ingredients
- ginger
- garlic
- scallions
- olive oil
- chicken wings
- sake
- soy sauce
- water
- eggs
- butter
- salt
- rice
Procedure
- Fry chicken wings in olive oil
- In the same pan, add the sliced ginger and garlic
- Deglaze the pan with sake once the chicken is seared
- Add sugar and reduce the liquid by half
- Add soy sauce then reduce again
- Add water then simmer for 30 to 45 minutes
- Strain the liquid then put in a container lined with plastic wrap
- Put in the fridge for an hour then skim the fat off the top
- Scramble some eggs
- Cook in a pan on medium to low heat, then add butter
- Scrape the bottom of the pan constantly and control the temperature by taking it on and off the heat
- Add salt and some more butter
- Put freshly cooked rice in a bowl and add the cut up the gelatinous chicken stock
- Top with the runny scrambled eggs
- Add more of the gelatinous chicken stock over the eggs
- Sprinkle the chopped scallions on top

Despite being called Transforming Furikake Gohan, the dish doesn't actually have any furikake in it.
Furikake is a Japanese condiment which is usually sprinkled on top of rice. It is made up of a mixture of dried ingredients like seaweed, sesame seeds, groundfish, and many others.
The Transforming Furikake Gohan gets its name from the aspic or the gelatinous chicken stock which is used like furikake but then melts and disappears into the dish.
