Richard Gomez shares the perfect rainy day recipe for arroz caldo

In the new episode of his online cooking series Goma at Home, actor and politician Richard Gomez shares a recipe perfect for the rainy days.

"Masarap 'tong kainin kasi nagsisimula nang umulan 'di ba? On a rainy day ang sarap kaya ng arroz caldo. It's warm. Comfort food talaga siya," he says of the dish.

Cooking from his outdoor kitchen, he demonstrates his special arroz caldo recipe.

"Ang gagawin natin, ipe-prepare natin siya into different bowls. You have your arroz caldo and then ikaw na maglalagay kung anong gusto mo," he explained.

Aside from the do-it-yourself style of serving, his special arroz caldo also uses pasta instead of rice.

"We're not using malagkit na bigas. What we're using is risoni pasta. Risoni pasta is rice pasta. Mas madali siyang lutuin and it's easier to control," he says.

Risoni, also called orzo, is a type of pasta shaped like grains of rice.

Here's how to make Richard's risoni arroz caldo.

Ingredients
chicken
white onions
salt
dilis
green onions
ginger
salted eggs
lemon
garlic
risoni
water
olive oil

Procedure
1. Make stock by boiling chicken, white onions and salt
2. Remove the chicken from the pot when it is tender or once the skin splits
3. Cool the chicken then chop into small pieces
4. Toss dilis in a dry pan to make it crispy then chop roughly
5. Chop green onions and ginger. Slice salted eggs and lemon
6. Sauté white onion and garlic
7. Sauté risoni with white onion and garlic
8. Once risoni is toasted, ladle in the chicken stock
9. Let it boil while stirring continuously
10. Serve arroz caldo in a bowl and top with chicken, green onions, ginger, salted eggs, sautéed onion and garlic and a squeeze of lemon.
