RECIPE: Bachigang (Baked Chicken Sinigang)

In a recent episode of Unang Hirit entrepreneur Richard Voloso shared a unique family recipe that became the foundation of their food business, the Bachingang or Baked Chicken Sinigang.

While initially, one could easily mistake it for roasted chicken, Unang Hirit's Eat Girl Love Añover cleared the difference between roasted and baked dishes.

Love says although roasting and baking are both dry heat cooking methods, the key difference lies in the temperature applied.

Roasted dishes are cooked in temperatures of 400 degrees Fahrenheit and up, while baked dishes are cooked at 375 degrees Fahrenheit or lower.

So, this makes Richard Voloso's Bachigang a certified baked dish that's definitely one-of-a-kind and can be recreated at home.

If you want to try your hand at it, below are the ingredients and procedure.

Ingredients:

  • 1 whole chicken
  • 2 lemons
  • ½ cup of soy sauce
  • ground black pepper
  • 1 lemongrass (tanglad)
  • ½ cup butter

Procedure:

1) Preheat the oven to 350 degrees Fahrenheit for 5-10 minutes.
2) Wash the chicken thoroughly and dry with a paper towel.
3) Pour or massage lemon juice all over the chicken, including on the inside.
4) Do the same thing with soy sauce.
5) Rub ground black pepper to taste.
6) Stuff lemongrass into the chicken and marinate it for 30 minutes.
7) Put ½ cup butter on top of the chicken once you put it in the baking tray.
8) Bake the chicken in the oven at 175 degrees Fahrenheit and bake for 1 hour.
