Who knew eggplant can be the main ingredient of the Pinoy favorite dish “Kaldereta”? Learn how to make it HERE:

Pinas Sarap's ECQusina is continuously helping Filipinos during the quarantine period by sharing ingenious and practical recipes using ingredients that can be easily bought from the wet market or grocery stores, just like the “talong” or eggplant.

There are many popular dishes that include eggplant as its ingredient such as eggplant omelette or “tortang talong” and “ensaladang talong”.

But did you know that eggplant can be used in making “kaldereta”?

Ameer Octavo, owner of a food business in Kawit, Cavite, shared his unique “kalderetang talong” recipe in ECQusina.

According to Ameer, he invented this recipe when he was still in Dubai, because eggplants there are huge and are difficult to cook as an omelette.

So, he thought of using the eggplant as a substitute ingredient for pork or beef in making the fave Pinoy dish “kaldereta”.

To recreate this one-of-a-kind dish, you'll need the following ingredients:

kaldereta mix
chicken longganisa
garlic
onion
cube seasoning
laurel leaves
tomato paste
seasoning powder
eggplant
