Here’s why those smoked meats at Holy Smokes are so sumptuous


Who doesn’t love a good barbecue? From isaw to big grills, this country is populated with palates always prepared to enjoy a savory bite.

In 2016, Holy Smokes opened in the trendy Makati district of Poblacion, which had barbecue fanatics lining up, eating, and still munching on the tender smoked meats, proclaiming Holy Smokes as a serious contender for the city — if not the country’s best barbecue.

Apparently, Kapuso actor Carla Abellana is a co-owner of the very popular joint. She co-manages the place and is quite hands-on, and in an interview with "Pop Talk", shared why Holy Smokes is, pardon our French, so damn delicious.

Aside from the quality meat, Holy Smokes prides itself in having a custom-made smoker that cooks the meat slowly. It’s what gives it that melt-in-your-mouth tenderness.

The usual suspects are on the menu — Beef Brisket, Pork Ribs, Smoked Chicken — and Holy Smokes tries to stay ahead of the competition with higher grade meat that's seasoned right. 

For a treat, the must-try is their Wagyu Brisket (P420). It's slow-cooked for 14 to 16 hours, which guarantees that it's "juicy" and "fall of the bone" soft.

"I think gold mine 'yong pork ribs also because bihira ako maka-encounter ng pork ribs na sobrang lambot," host Tonipet Gaba said. "These guys know what they’re doing. Fantastic."

Chef Roland Laudico had additional praise for the side dishes. "Common 'yong mga sides, but you do it your way — like your coleslaw may blue cheese, you're dirty rice ang dami niyang mga...ang dami niyang mga stuff, you're mashed potato is very fluffy. Everything that I've eaten...holy smokes!"

The cafeteria-style restaurant has a very laid back quality and guests are welcome to — as the meat does in the smoker — take it slow. — LA, GMA News
